Fave (Broad Beans) are all around! • The fave in my kitchen garden have grown prolifically this spring, but sadly, they will soon come to their end! You’ll still find them available with most good seasonal fruit vendors, however, they’re likely to be the older larger ones with a thicker light grey coat (which holds a bitter flavour!). To avoid this bitterness, you will need to undress them of their second coat. • Here’s how to prepare your fave; - the initial first step is to pod your broad bean. - then place them in a medium sized pot, covered with room temp water. Bring to the boil for about 5-8 minutes. Strain the beans and then plunge them in an ice cold water bath for a few seconds, which will allow handling of the cooked beans! The coat will easily pop or peel off, leaving the vivid-bright green inner bean! Happiness right there! How gloriously warm was today!!! For a split second I forgot it was winter! There were definitely spring/summer vibes in the air! • Days like today, make me think of this salad; garden fennel & orange! So refreshing and easy to prepare! • Ingredients • 2 large bulbs fennel • 3 large oranges, peeled, segmented • 90ml extra virgin olive oil (evoo) • Juice of 2 lemons, strained • ½ bunch flat-leaf parsley, leaves picked • Handful of capers • Few fennel fronds Optional: - 2 x red radishes, washed, trimmed, thinly sliced - 50g wild rocket, washed, drained - 50g white anchovy fillets (see note) Method: 1. Place the orange segments into a large size bowl. 2. Trim the stalks from the fennel, reserving few of the fennel fronds. Using a sharp knife or a mandolin, thinly shave fennel and toss in the bowl with the orange segments. 3. Add in most of the parsley leaves (reserve a few leaves). 4. In a small jar, add the lemon juice and evoo, seal the jar with the lid - shake the jar until it comes together (emulsifies). Pour into the bowl and toss through to coat the fennel & orange segments. 5. Place onto a serving dish and scatter with remaining parsley leaves and fennel fronds. Scatter over a pinch of sea salt and cracked black pepper. Optional: Can add the optional ingredients to this salad. Truly the perfect day to be feeling lazy (and lazy I have been!). • Here are some of the veggies I collected yesterday from my kitchen garden! Fennel with it’s fennel fronds, beetroot, broccoli, cime di rapa, lettuce leaves, parsley! What joy it is to collect! And anyone else feel that the constant winds have kept the white moth at bay? I have been lucky thus far; no white moth eggs found under the brassica leaves!!! I’m keeping my fingers crossed it stays that way!🤞🏻🤞🏻🤞🏻! • Keep on being safe and taking care! See you all soon! La Chitarra. • There were many of you asking about the pasta tool that I used in my stories yesterday; it’s called La Chitarra (it’s only spelt with one ‘t’ and two ‘r’s - I always spell it incorrectly doubling up on the ‘t’s and not the ‘r’)! • La Chitarra (‘the guitar’ in Italian) that I have is a pasta guitar tool! To describe it; there is a frame which is strung with music wire, and is used to cut fresh pasta sheets into noodles! It’s achieved by rolling a wooden pin/rod over the pasta sheet sitting on the strings! One side has the strings strung closer together (pic 2) which forms thickish spaghetti noodles, while the other side (pic 3) has the strings a little wider apart for fettuccine. La Chitarra originated in the Abruzzo region of Italy. • I first came across La Chitarra when I held an Abruzzo cooking class here at The Village Cooks with Mrs Stanisci and her pasta guitar! Mrs Stanisci (a family friend) originally from Abruzzo, immigrated to Wollongong, NSW many years ago. It was amazing to see her in action preparing Spaghetti alla Chitarra for the class! Orange Peel Marmalade.  •  If you’ve been juicing loads of oranges as we have, here is another use for your peels!   •  Ingredients:   •	170g orange p

Orange Peel Marmalade. • If you’ve been juicing loads of oranges as we have, here is another use for your peels! • Ingredients: • 170g orange peel, washed, white piths removed • 325g or 1+1/2 cup caster sugar • 360ml or 1+1/2 cup water, room temperature • 2 tsp lemon juice, fresh, strained • 1 tsp maple syrup Makes about 1 jar of about 450g Method: 1. Ensure the oranges are well rinsed before peeling. Make sure to remove the white piths with a sharp knife (this is where all the bitterness is at) and then cut peels into thin strips. 2. Place orange peel strips into a medium size pot and cover with cool (or room temperature) water and bring to the boil over high heat. Allow to boil for 5 minutes, then strain in a colander and rinse with cold water. Return to the pot and repeat the process another 3 times. This should remove most of the bitterness, but if not, repeat another time. 3. In the same pot, place in the caster sugar, water, lemon juice, maple syrup and bring to the boil or until the sugar dissolves. Now add in the orange peel and allow to boil over gentle heat while stirring slowly until it thickens into a marmalade (*see note). 4. Pour the marmalade into sterlised hot jar/s and seal immediately. Store in pantry. Once opened, place in fridge. * NOTE: How to know when your marmalade is set? Push the marmalade along a frozen cold plate with your finger. If setting point has been reached, the marmalade surface will wrinkle slightly and the marmalade won't run back straight away. If it's not at setting point, return to the heat and boil again for 2 mins before re-testing. A good sign to look for too - when the marmalade first comes to a boil, the bubbles are quite volatile, they form and pop almost instantaneously, whereas when the marmalade has thickened enough, the bubbles will be more stable. Nzuddi • Biscotti typical of the Sicilian towns of Messina & Catania. I baked these biscotti and served them for morning time out my Sicilian workshops over the pasta few weeks. • Historically, these biscotti were made on the 3 June for the feast of Madonna della Lettera in the Monastero di San Vincenzo (Our Lady of the Letter in the Monastery of the Vincentian Sisters). The name ‘nzuddi’ derives from the abbreviation of the name “Vincenzo” (Vincent) in Sicilian dialect. The recommendation is to serve nzuddi with a glass of dessert wine or a cup of espresso. • RECIPE: • 200g or 1 & ¾ cups ‘00’ flour (or can use plain flour) • 200g or 1 & ¾ cups shelled whole almond nuts, roasted, roughly chopped • 200g or 1 cup caster sugar • 1 tsp ground cinnamon • Finely grated zest of one small orange • 2 whole eggs, free-range or organic, about 50g each, lightly beaten. (NOTE: or you can use 3 egg whites instead of 2 whole eggs) • 2 tsp baking powder • Juice of ½ lemon To decorate: • ½ cup caster sugar • 2 tsp ground cinnamon • Good handful of whole almond nuts, roughly chopped Method: 1. Preheat the oven to 180°C convention oven setting. Line two baking trays with baking paper or silicone mats. 2. Sift the flour and cinnamon into a large bowl. Then add in the chopped almonds, caster sugar and orange zest – mix well till combined. 3. Make a well in the centre of the flour and add in the lightly beaten eggs, the baking powder and lemon juice. Using a fork, mix this into the dry ingredients until the mixture is thick and slightly sticky. 4. Meanwhile, in a medium sized bowl, mix together the caster sugar and ground cinnamon for decorating the biscotti. 5. Take about a walnut size or 1 tsp of mixture at a time and roll, in the palms of your hands, till it forms a small ball. Roll this ball into the sugar/cinnamon mix to coat completely. Place onto the prepared baking tray – spaced about 3cm apart. Place a roughly chopped almond nut on the top of each ball. Repeat process until all mixture used. 6. Bake for 10 minutes or until the biscotti are light golden brown colour. 7. Remove the oven and transfer to a wire rack to cool slightly before serving. #nzuddi

I have finally listened to all of your comments, suggestions, requests to sell the items I use in our cooking classes! • You will now be able to purchase kitchen utensils & equipment, gift vouchers, preserving jars & equipment, pasta tools, gnocchi boards, and a few antiques. And there will be more to come; my favourite cookbooks, linen, aprons, market bags, hand painted Italian plates, seasonal jams & preserves (made by moi), and my favourite hand wash from 'Ashley & Co' which we use here at The Village Cooks. • Unfortunately, I won't be able to sell these items online - I am not that organised!
