This post is not for the defensive or insecure. It’s an observation, an opinion and not an ultimatum. Of course like all opinions, it is subject to change. Change of opinion is progress, not a failing. Let’s now get to it. Pasta surfaces and which coats better with sauce? Extruder pastas from brass dies on the top, followed by hand rolled sfoglia pasta, and finally the popular steel roller pastas which is often made at home. We think you already know who the winner is before we even get to it. Extruders with the sharp brass dies (not Teflon coated dies or plastic dies) tear the surface like the way knife tears the oriecchette dome during the drag action. The resulting surface is coarse like sandpaper, full of character. This surface with the amazing shapes catch sauce like a boss which makes up for the denser pastas. This is the clear winner for sauce coating. The second place goes to hand rolled sheets from wooden mattarellos. The eggshell surface is unmistakable from the stretching of the dried surface as it continues to dry on the table, assuming your hydrations are not too high. This coupled with porous texture of the entire pasta gives it a soul which no other way can replicate. However, we are just talking about sauce coating so it comes second. If you factor in the porous pasta that absorbs sauces so well and the bite which is firm but still delicate (unlike extruder pastas, all bite), maybe it shouldn’t be second. They are both amazing but different in character. Now, let’s examine steel roller pastas that every household has. Pastas compressed through two precision smooth steel rollers to form an aesthetically pleasing silky smooth sheet of pasta to be cut or shaped as you please. We love it, we love our old Marcato. However, it is plagued with two issues. Repeated Compression which makes the pasta mostly all bite and not porous. The second is that the smooth surface from the steel rollers doesn’t coat most sauces well at all. It’s a compromise, it isn’t all that bad but it will not compare with the first two. (Of course with adjustments in ratios & processes, it’s still possible to work around it)

A quick Aglio Olio supper, the simplest pasta of them all but the most challenging in many ways. The quick version for tonight can be explained very simply. Shallow fry halved garlic cloves in enough olive oil to cover until it is beginning to brown slightly. Switch off the heat, toss in chopped chillis deseeded and chopped fresh parsley. Season with salt. Leave to sit while you do your chores, the oil will cool so it wouldn’t overcook. It will be just nice when you get back to it half an hour later. Good news for parents, took barely 2 minutes to make. The garlic will continue to slowly cook in the residual heat of the hot oil to become soft and golden like confit garlic. As it cools the oil will also be infused with the most lovely flavours of garlic. The chilli in hot oil is similar to how Chinese pour hot oil over chilli to infuse and make chilli oils. In this case the chilli will give the sauce some warmth and chilli fragrances without too much of the heat. Everyone will insist that their way is better. Let’s just say, we’ve geeked out on this over the years. Minced garlic, smashed garlic, garlic confit etc to test how it would be best to infuse the olive oil with the right flavours of garlic. We even mixed chillis, large chillis for sweetness and smaller chillis for warmth, with some seeds for that heat. The are so many ways to craft a desired Aglio olio. Each with their own merits. We know, Bigoli isn’t ideal for Aglio Olio because of the thickness but we wanted to test our new Marcato mechanical cutter. Also, steel roller pastas are too smooth for oil based sauces. Sfoglia handrolled sheets or extruded pastas are better suited for oil based pastas because of the porous texture and coarse surfaces. Hand kneaded Bigoli al’uovo at about 40% hydration (120g all purpose flour to 50g small egg) for that really firm bite suited to Aglio olio. Yup, it’s possible to knead 40% hydration pasta. Sunny often does it. There are various methods to knead low hydration noodles. It’s on the threshold of extruder pasta percentages or ramen noodles (30-40%) (which is often kneaded by foot because it is too dry to knead by hand.) It is like kneading a soft stone.

We remember an Italian chef on YouTube say, ‘for good pasta, the most important thing is the pasta.’ as he made that famed Italian gesture with his pinched fingers. It’s true, but that’s where Sunny would disagree. In spite of his decade long obsession with pasta/noodles. His mad passion to pursue the perfect sheet of sfoglia, the perfect shape of handmade pasta, and experiment with the many variables to control the texture/bite/density/flavour of pasta to match the dish. Even when he’s content with the pasta of that day, it takes a chef like Wen to intuitively transform it into something remarkable. Wen’s magic is that she’s a passionate cook, she cooks with love for us. Sunny has to pay attention to the variables when cooking, whereas Wen just cooks intuitively with her heart. It is important to remember that even the best handmade pasta can turn into mediocrity, if not handled and cooked well. Perhaps, that where Sunny would disagree. What the Italian chef probably meant was that a good pasta dish should always begin with good pasta. Good pasta is a team effort. Wen can make great handmade pastas but not as obsessively as Sunny. Sunny can cook decent pastas but never as passionately as Wen. We each have our different strengths in the kitchen. Together, perhaps romance makes it greater. It is helpful as well to note that children can be the world’s most vicious food critics. The blatant honestly which is so refreshing in young children. They haven’t learnt the intricacies of deceit and cunning. As little children, their intentions are so pure so it’s refreshing to have their honest criticisms as a means of to improve our cooking. Even amongst ourselves, we tend to be the worst food critic when it comes to our own cooking. Partly insecurities, mostly to learn.
