What’s for lunch?! Mushroom omelette 😋🍄🥚 This is what you need: Ingredients for 2 persons M. Shiitake (120 grams) M. Shimeji (150 grams) 6 eggs Chives Butter Olive oil for frying Pepper & salt Preparation For best results, I advise you to fry the omelets separately. It can also be baked in a large skillet. 1. Cut off the breeding base of the M. Shimeji and slice the M. Shiitake. 2. Beat the eggs (3 per person) in a small bowl. Season with salt and pepper. 3. Fry the M. Shiitake in olive oil over medium-high heat. When these are lightly fried, add the M. Shimeji. Season with salt and pepper. 4. Add the eggs. Stir briefly in the pan so that the mushrooms are well spread. Run the spatula along the edge of the pan so that the egg does not fry on the edge. 5. Spread some butter along the edge of the pan and put a lid on. 6. Bake the omelet for about 5-10 minutes on low heat until the top is solidified. 7. Sprinkle some chopped chives on the omelet. Serve with a croissant, nuts, a mini mango and a juice. I'm curious. How does it taste? After cutting through the coarse, deep green skin you will be surprised by the tender, red-yellow flesh on the inside. The Kabocha has a sweet taste, velvety texture. If you like pumpkin and sweet potato, then Kabocha will definitely be your new best friend this autumn. As well as being delicious, it is also super healthy! Just like pumpkin, the orange flesh is high in the anti-oxidant beta-carotene, which means that it is vitamin A is good for your eyes. The skin is also a excellent source of fibres. Moreover, you can use the Kabocha pumpkin to adding sweetness to your dish without extra sugar use! Preparation time 20 minutes Portions 4 person - Calories 184kcal p.p. What do you need: - 1 Kabocha pumpkin - 2 red onions - 2 garlic cloves - 250 grams carrot - 4 tbsp olive oil - 2 dried bay leaves - 1 tsp cumin - 1 litre of water - 1 vegetable bouillon tablet - 2 drops Tabasco - 120 grams cooking cream Easy and tasty Kabocha Pumpkin soup with carrot and cumin Cut the pumpkin into slices. Remove the seeds and the stringy inside and cut off the skin with a sharp knife. Cut the pumpkin into chunks. Finely chop the onion and garlic. Peel the carrot and cut it into slices. Heat the oil in a large pan and fry the pumpkin, carrot and onion for 5 min. Add the garlic, bay leaves and cumin. Pour in the water and add the bouillon tablet. Bring to the boil and cook for 20/30 min. Remove the bay leaves. Puree everything with the hand blender and season to taste with the tabasco, pepper and salt. This Chicken Teriyaki has an Asian twist. Wok this way! With shanghai pak choi, sugar snaps and mushrooms in the mix. Ingredients for 4 persons 1 M. Shanghai pak choi 150 grams M. Shimeji white 100 grams M. Sugar Snaps 1 red bell pepper 400 grams chicken 4 spring onions 400 grams noodles 250 ml teriyaki sauce Sesame seeds for garnish Handful of cashew nuts Preparation 1. Cook the noodles 2. Cut the chicken into strips. 3. Remove the breeding ground of the beech mushroom (M. Shimeji) 4. Cut the spring onions into rings and the M. Shanghai pak choi and bell pepper into strips. Keep the leaves of the pak choi separate. 5. Toast the sesame seeds and cashew nuts briefly in a dry frying pan until they look light brown. 6. Fry the chicken for 5 to 8 minutes until they are done. 7. Add the pak choi, sugar snaps and bell pepper to the chicken. Stir-fry briefly to keep them crisp. 8. Add the teriyaki sauce. 9. Add the noodles and cook for a few minutes. 10. Add the spring onion and pak choi leaves at the last minute. 11. Is it your first time using Enoki? Then I will tell you how to make this delicious easy noodle soup with Enoki, Shiitake and mini Shanghai (Bok Choi). Always turns out good! Ingredients for 2 persons: - 1 mini Shanghai - 100 grams of shiitake - 100 grams Enoki - 2 cm fresh ginger - 1 Red pepper (to taste) - Juice of 1 lime For the soup - 200 grams noodles - 1 vegetable stock cube - 1 tbsp. soy sauce Preparation 1. Cut off the bottom of the Enoki. 2. Remove the hard pieces from the bottom of the stem of the Shiitake. 3. Clean the shiitake with a brush or a piece of kitchen paper. 4. Wash the mini Shanghai and cut it into small pieces. You can use any of the Bok Choi. 5. Cut the red chillies into slices and remove the seeds. 6. Peel and finely grate the ginger. 7. Bring a pan of water with the stock cube to the boil. 8. Add the shiitake and noodles and boil for 5 minutes. 9. Add the mini Shanghai and Enoki for the last 2 minutes. Season to taste with the red pepper, salt & pepper, grated ginger and juice of the lime and finally the soy sauce.
