Mushroom Medly Potato Hash with Just Egg - one of the recipes I go to for the weekly meal prep for a quick breakfast before or at work, depending on how my morning is going. What you'll need 3 russet potatoes 1 package of shitake mushrooms 1 package of crimini mushrooms (or what ever mushrooms you prefer) 1 jalapeno 4 baby bell peppers A bunch of kale Olive oil 1 container of just egg A few sprigs of fresh thyme Tamari Maple syrup Cumin Red Cheyenne pepper Salt and pepper Mushroom seasoning Turmeric Paprika Nutritional yeast For serving I placed about 1/4th an avocado smashed up and topped with some vegan cheese like so delicious Mexican shreds. Add some green onion or cilantro for garnish 👩‍🍳 😝 Mexican Cauliflower Rice Casserole Ingredients: 2 1/2 cups grated cooked cauliflower or frozen riced cauliflower 1/2 cup mild Rotel diced tomatoes 1/4 cup salsa 1/8 tsp salt 1/8 tsp pepper 1/8 tsp garlic powder 1 cup reduced fat Mexican cheese, grated 9 oz chicken breast (should yield 6 oz cooked), chopped; or ground turkey 1/2 tsp low sodium taco seasoning 1 tsp olive oil Directions: Season chicken w/taco seasoning and toss w/olive oil. Marinate for at least 4 hours. Grill, bake or broil. Set aside. (or cook and season ground turkey). In a large bowl, combine grated cauliflower, Rotel tomatoes, salsa, salt, pepper, and garlic powder. Pour into a casserole dish (I used a 9-inch pie plate), layer w/chicken/turkey and then cover w/cheese. Bake at 350°F 25 minutes or until cheese is melted. Divide into 2 equal portions. I love adding fruit to my salads, it really just makes it. The right ingredients and a good dressing and it’ll taste amazing trust me. Plus think of all those micronutrients 😍⁣ ⁣ This particular salad (and most of the ones I’ve had recently had nectarine, strawberries, red cabbage, spring onions, salad leaves, tomatoes, cucumber & vegan garlic & herb chicken (@squeakybeanveg ) and dressed with extra virgin olive oil, balsamic vinegar and a drizzle of truffle honey 🍯 ⁣ ⁣ What are your favourite salads?
