Contrary to what you’ve been told, Italians never invented it. In fact, no one really knows for sure WHO invented Chicken Parmigiana 🤷🏽‍♀️🤷🏻 but it seems to spring up in big cities and places with a sizeable Italian immigration settlement – New York, New Jersey, Fort Lauderdale, Toronto, Australia, Argentina, and Brazil. (Oh yeah - I’ve had my fair share of AHHHMAZING Chicken Parmesan over the years 👌🏽😃) Chicken Parmesan was a trend that caught on, likely by emigrated chefs 👨🏻‍🍳 nostalgic of home-style cooking wanted to recreate “la dolce vita” when they couldn’t be in Italy. Its most likely an international variation made from a old traditional recipe from southern Italy in Sicily. “Parmegiana” meant twice-cooked aubergine or eggplants. The Sicilians would dip slices of eggplant in a thin layer of beaten egg, bread and fry them, top them with slices of parmesan cheese and home-made tomato sauce before finally baking them in the oven. 😋 Welp, no matter where it originally came from, this dish is, and will probably always be, one fo my FAVORITE Italian-American entrees. Inspired by a DM that said “I can’t get to that neutral place with food because I don’t have the willpower” - ohhhhhhhhh my - where to begin. First of all, that’s what most/all of us past dieters thought! We thought “MAN I really don’t have ANY willpower, do I? I’d better go back on this diet tomorrow and this time be even better.” That sets up a diet binge cycle that can lasts decades, or often: our whole lives. This all stems from a very widespread and insidious cultural belief that our appetites cannot be trusted. If we give in to our appetites, we will surely self destruct, right? I mean, that’s what we have done over and over and over with every diet we have gone on. The more we diet, the more it seems to prove itself: I cannot be trusted. I have no willpower. The secret is: it’s the diets, it’s the culture of encouraged under eating, it’s the culture of guilt over taking a few “extra bites.” It’s the culture, it’s the diets, it’s the past diets, and it’s the fear of future diets - our body is just too wired against restriction to put up with our “willpower” without fighting back. So the answer is going through a difficult (but ultimately, extremely freeing) process of trusting your body again, so your body starts to trust you. Breakfast was apple and cinnamon porridge and a chicken roast for dinner this evening with gravy. 4 simple but effective changes that you can implement to transform your progress. 1. Learning to say "no". This is tricky for some and not for others, but learning to refrain from giving in to peer pressure from family, friends and colleagues is a huge step towards success. Likely they don't understand or appreciate your goals and others don't want you to succeed where they can't. On the other hand, learning to say no to yourself and having the discipline to delay that instant gratification from a "treat" (you arent a dog) is an even bigger step. Practice both and you are already winning. 2. Associate with the motivated. Surround yourself with people that have similar goals or positive, supportive attitudes. Winners help winners. Rid yourself of those that bring you down. 3. Be accountable. The only person responsible for your success is you. Legitimate reasons to have breaks and days off are absolutely fine, but excuses are not and will get you nowhere. This might sound a little harsh, but if you really want it, do it, there's no other way of putting it. 4. Learn to rest and recover. Don't hammer yourself every day and expect results. Having time to rest and relax are as just as important. There is such a thing as diminishing returns.
